Monster Eye Meatballs

Ingredients

  • 3 c all-purpose baking mix (like Bisquick)
  • 1 lb ground hot pork sausage
  • 1 (8 oz) block Muenster cheese, shredded (Ha! Muenster. Get it?)
  • 1 (7 oz) jar pimento-stuffed Spanish olives

Instructions

  1. Combine first three ingredients in a large bowl.
  2. Mix until blended (I don’t use a mixer, just a wooden spoon).
  3. Shape mixture into 1 1/4 inch balls.
  4. Place on lightly greased baking sheets.
  5. Press one olive into the center of each ball.
  6. Bake at 400° for 15 to 18 minutes or until lightly browned.

Yield: About 4.5 dozen

My hubby loves what we call sausage balls and he loves olives:) This would be a fun Halloween treat for him!

I used to make those. In fact they were our caretakers absolute favourite item at church pot lucks. BUT I have never put olives in them. Maybe I should try!

Hola Chilihead,
You asked a question on my blog and the answer I’m going to stick to is cook it first then freeze it. I think that’s safer all around. Besides all that stuff you buy at costco that’s frozen and needs cooking says fullly cooked before freezing…..I think anyway….How’s all that for me being sure of myself.
